One Dish Dinner - Chicken, Potatoes & Green Beans
Full disclosure: I originally found this recipe online at www.theshadyporch.com
I made a few tweeks and wanted to share. I made this last night and it was a huge hit at the Fenner House.
It was particularly a hit with me as it was so easy but also because the Fennerettes were smacking their lips and smiling.
This is one of the best uses for the boneless, skinless chicken breasts that I buy at Aldi's on the cheap. I have also bought some really great huge fresh chicken breasts at Sam's Club that this would be perfect for. This is a super budget friendly meal.
Ingredients
Green Beans - frozen or canned (I used canned)
Potatoes, chopped and rinsed (any variety of potato, peeled or unpeeled to suit your families taste - I used regular russet potatoes and they were great. I also love red potatoes and will probably use those next time I make this)
Chicken breasts - fresh or thawed
Stick of butter or margarine -melted
2 packet of Italian Dressing & Recipe mix or Ranch dressing mix
I used three breasts per pan (9x13) and made a double recipe for this hungry crew. I put the chicken breasts in the middle of the pan. I used 3 cans of green beans ( 1- 1/2 cans per pan) and then enough potatoes to fill the other side of each pan.
Melt the butter and drizzle over top the entire dish and then sprinkle the dressing mix on top. I used 2 packs of Italian on one dish and a large envelope of Ranch on the other pan. (The Italian was my favorite.)
Cover the casserole dish with foil and bake at 350 degrees for 1 hour 15 minutes. The original recipe called for one hour of baking time but mine was not done. Of course ovens vary so temperature probe the chicken and fork test the potatoes for doneness. An hour may be sufficient for your oven.
You could easily substitute other vegetables for the green beans or as my husband suggested you could add in some carrots.
Happy eating!
