What's for dinner Mrs. Fenner: Baked Parmesan Pork Chops
One of Pa Reggie's favorite foods is pork chops. Specifically, battered up piled high fried
pork chops. However, in our quest to eat healthier, I began searching out a way to prepare his favorite foods without the negative aspects.
I tried several different ways and found this one to be the favorite. It is so simple that it is certainly a favorite with the chef for that reason.
Baked Parmesan Pork Chops
Ingredients
6-8 boneless (1/2 to 1 inch thick pork chops)
1/2 cup butter, melted
2 cups Italian seasoned Panko bread crumbs
1 cup grated Parmesan cheese
Instructions
1. Preheat oven to 375 degrees. Spray a 9x13 glass baking dish with cooking spray.
2. Combine the Panko bread crumbs and Parmesan cheese into a large freezer baggie.
3. Shake bag well to mix all together.
4. Dip each pork chop into the melted butter, and then drop into the baggie. Seal the bag shut and then shake well to coat with bread crumb/cheese mixture. After well coated lay pork chops into the baking dish. Repeat with all pork chops.
5. Once all pork chops have been coated, sprinkle the remaining seasoning mixture over the tops of each.
6. Bake for 30 minutes, uncovered, or utnil cooked through. Serve immediately.
Very quick and simple and much healthier than fried I am sure.
